Whether you prefer informal or formal, dinner is based on fresh, sustainable local foods paired with local wines. Tapestry Lounge features signature cocktails, wine and beer along with small plates and an informal menu. The more formal Victorian dining room, Caroline’s, focuses on fresh Colorado foods such as elk and beef along with fresh, local produce prepared in the classic French tradition. We are always happy to have large parties so please always confirm if there are changes to your plans as we have limited seating. No separate checks for parties of 6 or larger please!

We had a wonderful dining experience at Caroline’s. Our server , Lupita, was excellent, very friendly and accommodating. The salmon special was delicious. Pesto crusted salmon over Alfredo pasta and spinach. We got a a glass of wine from their local winery that was excellent . The entire staff was very friendly.

We really wanted this place to be nice. Walking in, it's such a great ambience. Tablecloths, nice windows, high ceilings, friendly staff. Our service was fine. The food was the problem. This place needs to hire a chef that can cook. We had the steak, Califlower app and Calimari. First off, the Calamari was cold and the dipping sauce had no flavor. We felt that we could have had better Calamari out of the frozen food aisle with ketchup. Next, the Califlower- also cold- and undercooked. No flavor. It came with an aoli so that helped but it was undercooked and delivered cold. Next the steak and the potatoes that came with it. Again, the steak was delivered raw (asked for Medieum rare) and stone cold. Who the hell is in the kitchen? Did the staff just let the food linger and linger before it was delivered? We had two bowls of soup too- the tomato and the french onion, bith hot and good. For the money, a 32.00 steak should be PERFECT. Get a chef Carolines!! You have lots of potential but not with who is doing the cooking...

The food was delicious! Complimentary glass of wine as guests of hotel … was very good! The strip steak was cooked perfectly, very tender and the vegetable ragout was very yummy , comfort food ! Peach vinaigrette made with local Palisades peaches was tasty! Service was excellent and it was very quiet and quaint!

We participated in the wine paring dinner on Valentine’s Day! The service, food, ambiance, wine, atmosphere were all excellent!

This restaurant is a hidden gem. The atmosphere is quiet and upscale. The food is crafted and presented very tastifully. Love having dinner there.
