We have grown along with it, and as a result, we have been successful. It has been through this growth that we have become a staple in our community. Our statement of farm to table is our truth. What started out as a butcher shop concept, has evolved and changed over the years to become a full-service restaurant, which was solidified with the restaurant's move to a larger space in 2022. At Bavette, the consumer will enjoy complete transparency of its food moving from farm to plate. Although the butcher shop has been phased out, the restaurant still works with the same farms, and uses the same high quality meats on its menu, which consists of a daily changing menu consisting of salads, sandwiches, small plates, pates, cheese, and charcuterie boards. The restaurant truly is a farm-to-table restaurant, sourcing not only the meat but most of its produce from nearby farms. In addition to the highly seasonal menu, there is a small store featuring chef-curated retail items, such as Wisconsin cheeses, local charcuterie, artisanal jams, pickles, salts, vinegar, and oil. Going along with the thoughtful menu is a select and unique offering of craft beers, wines, and cocktails.

Class sizes determine our availability as we are a student run restaurant. Our hours fluctuate with the number of students enrolled in the semester and some days we may not be open. Cuisine Restaurant is a student operated advanced training facility for MATC's Culinary Arts program. The restaurant allows students to gain practical experience in a high-end culinary environment. Amazing service! Food was fantastic. Smash burger was smashalicious and the Spicy Vodka pasta was delish! Fantastic wine list. The Foccacia is tasty. My only recommendation would be to have it warmed up or fresh out if the oven would be over the top!

We enjoyed our first dinner at Birch. We had the chef’s tasting menu and it was delicious. Every course had a surprise and new flavor. It was well paced and just enough food. Definitely be back!

As usual, the food was exceptional! The menu is always creative and unique! The server was attentive and knowledgeable about the menu. Atmosphere lively! I have been enjoying Bavette’s for years and really love the new location! Can’t wait to visit again!

Everything was great from the waiters to the food. Food portions were just right. Having 4 choices for the appetizer as well as the entree would suit any tastebuds. This was my first time eating a MATC Cuisine and will be coming back.
