How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

Spectacular. Started on a worrisome note as we were seated in the loudest high traffic spot nearest the kitchen & patio & server walkway. But then the food started coming. Crab cake & pork belly burnt ends were both outstanding. Ribeye steak was fantastic with the charred onion sauce. Top 10 lifetime steak, totally unexpected. Shrimp with artichoke hearts was likewise spectacular. Panna cotta with flavored honey was delicious. We’ll be back — at a quieter table (maybe the patio).

Wow, what a treat! Ethan and the service team was exceptional. The 6 of us enjoyed our bottles of bubbly and our choice of juice, especially the white cranberry. Our food--bibb salad, bacon and mushroom fries, lemon pancakes, fried chix and waffles, burger, short rib hash, all were great.

Everything was amazing as usual. We were greeted with a smile and seated within 5 minutes. We were blessed with our server Beth and her assistant. They are always both amazing and treat you like family. Beth is very knowledgeable about the menu items and makes great suggestions. Both our servers replenished our coffee, checked with us several times to see how we were doing. The food was excellent - - the service from our servers, greeters and other staff members exceeded expectation. Well done!!

The dining experience was amazing! Shout out to the manager who was the first to greet me and my fiance and wish us an amazing anniversary. It was great.

The food was really good and it's a great value for a steakhouse in this area. The Bibb salad was really flavorful and delicious. The fillet was good but maybe a little undercooked for the way we requested. They have a lot of sauces to choose from for the steak and they don't charge for them. The chips that come with the steak are really nice. Cocktails are also reasonably priced at approximately $14 which I think is low for this area. I think the ambience could be improved if they dimmed the lights a bit.

Was an overall great experience. My wife and I went for our anniversary. Upon being sat at our table we were greeted by one of the managers who wished us a happy anniversary. Service was great and food was amazing!!!

Appetizers were good. Drinks were okay , I was served a cold steak, waiter was visually upset when I asked why my steak was cold. Sides were mediocre. I would never recommend this steakhouse to anyone.

Was one of our "go to" weekly spots until a we had an issue a while back. Tried it again and we're very impressed with the menu and the service. Lots of great small dishes to sample. We will be going back frequently as we work our way through all the great items to taste!

Server seemed too busy at the time. Tough to get his attention and was rushed all night. Super nice guy though, and we had a great experience.
