Establishment at Statler is a refined casual dining restaurant that is operated by students in the School of Hotel Administration’s Restaurant Management course. Positioned as a classroom first and a restaurant second, Establishment serves as a hands-on learning environment for students to synthesize foodservice concepts, business principles, and hospitality management theories. As a restaurant open to the public, our goal is to provide our patrons with a unique and fulfilling dining experience. The menu at Establishment has been engineered to reinforce students' knowledge of various cooking methods, tools, and equipment, while simultaneously providing guests with an enticing, eclectic mix of dishes inspired by a variety of different cuisines. Service at Establishment is intended to be comfortable and relaxed, yet polished and professional. Students are trained to anticipate guests' needs and to provide the level of service expected at a refined casual dining restaurant.

The food was delicious and servers were very polite and it created a very nice, fun atmosphere. It was a cool experience

The students never know how to open a wine bottle but otherwise they are very attentive. Chef Sean was nice to stop and introduce himself so nice.

Our waiter had never opened a wine bottle but we didn’t care. He got help The place needs some ways to quiet the room Carpets under the chair seats bit baffled things in ceiling as the students tend to scream at each other. All around a fun place with excellent food Dr alex wood

Food was mixed, meat cooked well but appetizers, sauces, desserts, and mash potato/pomme puree (I couldn’t tell which one they wanted it to be) left s lot of be desired. For student run restaurant, very impressive!

Had a great three course dinner run by the students at Cornell. So professional. The specials were excellent. Very attentive service. Overall great experience!
