Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina.     Our family from NY cerebrated Christmas at Choplin’s for the first time after hearing great things about the restaurant from friends in the area. We could not have chosen a better place to celebrate. The food was delicious, portions were huge and the dessert menu had something for everyone! For a group of 15, it’s not easy to satisfy everybody and Choplins nailed it! The interior has modern touches, yet warm and friendly. We can’t wait to return to this family operated gem. The service was impeccable even with so many Christmas parties going on. We live in New York City where there are amazing restaurants. I would recommend Choplin’s to anyone who has high expectations for steaks and seafood. Thank you for making our family celebration truly memorable! Kudos the owners Faith and chef Wes who came out to check on our group and to Samantha who made sure everyone enjoyed! Merry Christmas!

    The Port City is one of my new faves! I just love the Orange Julius and Lobster dumplings though only four at $5 each is bit much since I would love them as a meal!!!! The Chili Crusted Seared Tuna is amazing!!! Hope to make it a monthly stop.
