Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. “This is food the way we like to eat,” says Joe Davi, Founding Partner at Nona Blue.Davi and Bill Bona, also Founding Partner at Nona Blue, saw American dining trending toward smaller portions with different tastes; sharing at tables had always been an option, now it was being encouraged. We are honored that Primo has been designated a Recommended Restaurant in the inaugural Florida 2022 MICHELIN Guide. Led by award-winning chef Melissa Kelly, our restaurant serves authentic Italian cuisine, featuring organic produce and a carefully crafted wine list. The menu focuses on the farm-to-table experience with seasonal highlights including produce, honey and eggs sourced from on-premises Primo Garden and Whisper Creek Farm in addition to Mick's Farm and Frog Song Organics in the local community. All seafood is also locally sourced from Florida waters, including clams from Cedar Key, white shrimp and squid from Cape Canaveral, and Snapper, grouper, and other seasonal catch from Ponce Inlet. Mountain Trail Farm in Clermont, FL provides Primo with whole pigs, which are prepared several different ways. Primo also has a long-standing relationship with Lake Meadows Naturals in Ocoee, FL for chicken and ducks.
