You might find scallops still in their shells, Oregon pork in the style of Braciole, & popovers I learned to make from my mother-in-law, Terry, because she makes those every Christmas morning... beef tartare, sea urchin, caviar, etc too. Smith comes from a large family of cattle, sheep and grain farmers. He started cooking at a young age in his mother’s kitchen.
