Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Our new home, located at Alvaro Obregon 65 bis - a much wider space where gleams of natural light shine upon the surface-, is carefully assembled by Gabriela's meticulous look, and a kitchen built within Eduardo García's early memories, while living as an inmigrant in a barn in Ohio. Visitar este restaurante en el corazón del Centro Histórico fue una experiencia excepcional. Desde el momento en que entramos, nos recibió un ambiente cálido ylleno de detalles. La comida fue simplemente espectacular. Probamos los tacos de la plaza, lasaña de chicharron, tuétanos al horno,quesadillas Oaxaca Para acompañar, no podían faltar las aguas frescas que estaban deliciosas. El servicio fue impecable, con meseros amables que conocían bien el menú y ofrecieron excelentes recomendaciones. Los precios fueron razonables considerando la calidad y la ubicación privilegiada. En resumen, este lugar es una parada obligada para quienes buscan una experiencia gastronómica mexicana auténtica y memorable. Sin duda, regresaré en mi próxima visita a Paxia . ¡Altamente recomendable !

Todo estuvo muy rico las recomendaciones de Sopecitos de tuétano * molotes de plátano con chilorio * Mosaico azteca, Crema de pistache, Sopa de tortilla, Fideo seco, Ensalada de mandarina, Cabrito en barbacoa * Filete de res con tuétano, Los postres muy ricos Arroz de la abuela, pastel de elote en especial el Pay de pétalos de rosa ¡excelente !
