We meet in them to dream and talk in a casual space, but with good service, good food and a good atmosphere. In terms of gastronomy, respecting the richness of the flavors and techniques of our traditional cuisine, we take the emblematic dishes of the DF canteens, we enriched them with delicacies from botaneros and canteens from the rest of the country and we ventured some of our own proposals.

Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Our new home, located at Alvaro Obregon 65 bis - a much wider space where gleams of natural light shine upon the surface-, is carefully assembled by Gabriela's meticulous look, and a kitchen built within Eduardo García's early memories, while living as an inmigrant in a barn in Ohio. Despite this big change, our principles initially founded remain the same: to offer food that distinguishes the best of local products.

Lardo in Mexico City is known for chef Elena Reygadas' cooking of Mediterranean food from a wood burning oven. Diners are encouraged to share. Through gastronomy we seek to stimulate changes in the way we consume and approach the environment with the support of Micaela Miguel in the conceptualization of the project and the direction of Chef Heriberto Gutiérrez. At LagoAlgo we favor the local and dialogue with the global. Local products are at the center of our attention and we are moving towards a farm-to-table model with the firm commitment that, in the short term, all our food will come from local, traceable and environmentally friendly producers.
