Küchenchef Gerald Zogbaum geht es um die intelligente Verbindung von Können und Einfallsreichtum -nicht um kurzlebige Zufallseffekte. So sorgt etwa der variationsreiche Umgang mit Temperaturen, Konsistenzen und Geschmackskombinationen immer wieder für Überraschungen - besonders spannend bei vermeintlich Altbekanntem. Durch aromatische Fonds, fast vergessene Kräuter- und Gemüsesorten, sowie ausgefallene Öle entstehen auf diese Weise neue, erfahrenswerte Sinnesfreuden.
