Enjoy dining in our art filled main dining room and open kitchen. Brunch every Sunday 11-3. Weather permitting, alfresco dining on our shaded patio is very popular. Our emphasis is on preparing and presenting dishes reflecting the highest culinary sophistication accompanied by wines and wine service of comparable excellence. Expect full-service refined dining in a warm and friendly atmosphere welcoming tourists, local residents and winemakers. Our Dundee Tasting Room is open Wednesday-Monday from 11am-5pm.Holiday Hours: Our Tasting Room will be closed from Monday, December 23rd to Thursday, January 2nd. Mushrooms are the heart of what we do at the Joel Palmer House. We have always endeavored to obtain seasonal and local ingredients and we use many locally produced greens, herbs, and vegetables, some of which come from our own culinary garden. We are frequently inspired by ingredients found in the cuisines of France, China, Thailand, Poland and India, so we call our cooking "freestyle." Our dishes pair well the celebrated wines of Oregon, especially Pinot Noir, Pinot Gris and Chardonnay. Our extensive, Oregon-focused wine list has been awarded the Best of Award of Excellence from Wine Spectator. Of special note, The Joel Palmer House ranks as one of Oregon's finest historic homes and is on the National Register of Historic Places and the Oregon Historic Register. Built in 1857, the house is Dayton's oldest standing structure. When weather permits, guests can enjoy their dinner on our outdoor patio, soaking in the last rays of sunshine in the heart of Oregon Wine Country.

Visit us on Ribbon Ridge, where we have something for everyone!At Trisaetum Winery, we specialize in Pinot Noir, Riesling, Chardonnay and Sparkling Wines. Daily, we offer a selection of flights, each with five wines you can enjoy in our art gallery tasting room or out on our covered patio. The tasting fee is $45-50 per person and fees are waived with a minimum purchase.We are also home to Brixeur Spirits, which was started by the team at Trisaetum in 2020. With vodka distilled from estate grapes, gins with locally foraged botanicals, and whiskeys aged in a mix of used Pinot Noir, Cabernet Sauvignon, and Riesling casks, our approach to the distillation and aging of spirits is heavily influenced by our winemaking roots.
