He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. The service is always excellent and the wait staff always have a smile and kind word. Food is always excellent! I would recommend this restaurant as one being the best in Denver.

If there was a .5 option I would’ve given 4.5 stars for food and value. The bread lacked flavor unfortunately—it could’ve used a better garlic butter glaze on top (tasted like the salt was missing from the dough). Alternatively a salted butter for the table could’ve been offered. Other than that, the food was amazing and the waitress had excellent recommendations. The butcher’s cut was amazing, creamed corn crème brûlée is a must. I’d go there again for any occasion.

Had the date night meal for 2. Everything was cooked right and service was good. Placed was packed and seem overwhelming for the staff but they seemed to keep their heads straight and worked hard.
