Thomas Danigo a l’impertinence et l’envie de se dévoiler tout en préservant ses secrets. À travers chaque composition, c’est un souvenir de ses explorations qu’il transmet, transformant une assiette en une surprise sensorielle pour les papilles, les yeux, le nez. Fort de ses expériences, dont 7 ans au restaurant étoilé Laurent, Thomas travaille le végétal, l’amertume, l’oxydation, l’acidité, honorant les produits du terroir et des producteurs qu’il aime tant.
