1972 eröffnete Tony Roma sein erstes Restaurant in North Miami, Florida, USA. Schon bald wurde Tony Roma's Place wegen der herzlichen Atmosphäre und den schmackhaften Speisen über die Stadtgrenzen hinaus bekannt. Um die Spezialität des Hauses, die Baby Back Ribs, zu genießen, reisten die Leute meilenweit. Dies sprach sich herum – Grund genug für Tony Roma, seine Ribs auch Gästenaußerhalb Floridas anzubieten.Tony Roma's eroberte die Welt – erst die Westküste, dann ganz Amerika.
