Talking up St. Louis' wide-ranging Italian eatery scene, which gets as specific as regional specialties, he says he's wanted to have a place like this since he was 18."We're going to start very simple and accessible," he says, "we'll play to the crowd and start a dialogue, then grow the menu with community input.""Simple," includes dishes like his tomato bisque, with which only has five ingredients. "It's all about the perfect balance. And that gets back to the essence of good Italian food: quality ingredients, very few, in perfect balance." CS is the best restaurant in Colorado Springs, without a doubt. Their service and food are top notch. Jason is an excellent server and pays attention above and beyond every time we're there. Beef seems to have decreased in quality the past few years, but not so at CS. Their steaks are always done to perfection, tender and delicious. We've never had a poor experience at CS.
