This includes the sauces and pasta, each made fresh and never frozen or kept overnight. Some of the signature dishes at Vaticano include the bucatini amatricina which is pasta with chopped bacon, onions and pecorino in a spiced tomato sauce as well as the pappardelle vaticanus, which is served with mushrooms and caramelized onion in a marsala wine sauce.
