He has a passion for local and seasonal ingredients, sourcing sustainable produce and items that he forages in Somerset woodlands and along the coast. Tim’s menus reflect his travels worldwide and the food he loves. ‘My passion,’ he says, ‘is to combine simple ingredients - with some elaborate sauces - and my aim being nothing more than to delight the palate.’ In addition to the à la carte selection of sharing dishes, Tim offers a set, fixed-price multi-course menu once a month. .Local produce includes lamb and beef from Wonky Horn just outside Wiveliscombe, from the town’s local butchers, Thorne’s, and vegetables and salad sourced from nearby Wagtail Farm and Ray’s Veg at Halse.
