Cardinal is a relaxed fine dining restaurant from chef Tomas Gormley. Located in Edinburghs historic New Town Cardinal offers a modern approach to Scottish cooking. With a wide range of local and sustainable suppliers at our doorstep, from our Lobsters and Crabs at Belhaven Lobsters in Dunbar to our vegetables and Native breed meats at Free Company Farm in Balerno we’re lucky to be taking advantage of Scotlands unique and unrivalled natural larder. Cooking over coals helps add an extra layer of flavour to whatever we’re cooking on them, it’s more intuitive and engaging as cooks and we feel like that comes through on the plate. Tasting menus are our bread and butter but we also offer a pre fixe 'A la carte' menu.

The Cumberland Bar serves Scottish food, real ale, classic wine and spirits in Edinburgh’s New Town. It takes about 15 minutes to reach its location at 1-3 Cumberland Street on foot from Waverley Station. Edinburgh Castle is about a 10 minute drive away from its premises and Edinburgh Playhouse Theatre can be reached within a 10 minute walk. The restaurant uses fresh and organically sourced ingredients to prepare its food including several traditional Scottish recipes are served with a modern flair. Absolutely outstanding food really good for people who have dairy and gluten allergies we was so impressed to be even able to have a dessert. Staff was so friendly and helpful really had a great time.

Easy to book and I was able to modify my reservation. Food was tasty and servings generous. Our server, Matilda was friendly and helpful. It was a bit noisy, in the Brewhouse Bar, but we soon got used to it and would definitely recommend and go again.

Fantastic food and service, as always. Really varied menu fir both of us (one carnivore and one vegetarian!) and delicious, fresh and exciting flavours. Staff, as ever, were attentive and helpful. Best brunch in Edinburgh.
