Dry aging is a maturation technique to let the natural enzymes break down and tenderize meats while creating a more intense flavor and enhanced texture, losing up to 35% water weight. Longer dry aging also means a more concentrated flavor, meatier texture, and sharper aroma similar to aged cheese. Chef Back suggests to enjoy our dry aged steaks with our various house blend salts to enhance the dry age qualities.

100% recommend! I recommend getting the OHMI Wagyu! So pretty in terms of aesthetic (insta-worthy) and it literally melts the moment it reaches your tongue!
