In 1927, the USDA established a standard by which American beef would be graded. Prime beef accounts for only 2% of all graded meat. AJ's uses only the best quality USDA Prime beef from the local butcher shop, Rugby Scott. All of our steaks are seasoned and smoked, slowly cooked to a rare temperature, then finished on an 800-degree wood-fired grill. This method, we truly believe, makes the best quality steak. Our steaks are finished with house-made compound beef tallow. A variety of accompaniments are available.
