Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.

To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. Any guest denied entry due to our dress code can be accommodated immediately or in the future after adhering to our attire guidelines.

It's nigh impossible to avoid hyperbole in describing Bacán. The whole experience was exceptional. We took a two-top on the outdoor terrace, backside of the posh Wave Hotel. For a spell we were the only ones out there on a perfectly suited semi-humid 80 degree eve. Bread service was impeccable, an agave oat brioche with chipotle butter, paired with Alvarinho from Rias Baixas. Apps were spot-on, too--a very clever rendition of Latam street food and an amuse bouche courtesy of the chef (a decadent butternut squash soup, if I recall correctly). Entrees were a very authentic and inspired birria short rib and a decidedly modern expression of Brazilian seafood stew, moqueca. We didn't veer south of the equator for wine, choosing instead the 2022 Vietti Perbacco (Langhe Nebbiolo), which cut fat and enhanced flavors in the way Nebbiolo so deftly does. In fact, this vintage of Perbacco could easily pass for a house Barolo. It's a no-slouch hitter. Service was second-to-none. I can't specifically remember our server's name (Ricardo??), but he knew how to elevate tableside management. One of the best dining redoubts in Orlando, no question. A Lake Nona treasure for the locals especially. We'll be back. VERY highly recommended!

I had a fantastic dining experience at Bacan. The food was bursting with flavor, with each dish thoughtfully prepared and perfectly seasoned. The presentation was equally impressive—beautifully plated meals. The ambiance was warm and inviting, creating the perfect setting for a relaxed and enjoyable meal. It was very obvious our server was much nicer to the table next to us, didn't even check on us throughout the night. Took my mom for her birthday and thought it was going to be at least nicer than a typical restaurant, but was disappointed that it didn't feel extra special.
