This menu showcases our team's commitment to full utilization, locality, and seasonality, and showcases grains milled at Id Est's Dry Storage in Boulder, CO. It represents our brutalist ethos by way of highlighting raw, fire, earth, texture through sourcing and showcasing local food systems with global influence. Allergies need 48-hour notification. Dietary restrictions not communicated in advance can not be accommodated. Due to the nature of our menu we cannot accommodate soy, mushroom, allium, nightshades, peppercorn, celiac (if cross contamination is not OK).
