Carve Prime Rib, is located in the heart of Cannery Hotel Casino and open for dinner Wednesday through Sunday. I visit Cannery often and have walked past this restaurant many times. Finally decided to try it for my son’s birthday & I was very pleased with everything! We went on a Thursday night so it wasn’t really busy but our server Derrick was great & the food was delicious. We had the crab cakes for appetizer & also ordered the Cesar salad. Crab cakes were perfect & the Cesar salad was enough to share. The salad was fresh & held a cool enough temp. I can’t stand warm salad. lol! I also ordered the salmon which came with sautéed spinach. I added Oscar style which made the dish even better! We added the Mac & cheese along with the asparagus for sides. I’m a little picky about Mac & cheese but it was not bad at all & the asparagus were nicely sized & very tender from tip to end. My son ordered the ribeye which he also enjoyed. The drinks were also made very well. I had a Cadillac margarita & my son had the lemon drop. My son was initially skeptical about dining there but in the end we were glad we went. The price was as expected for such an establishment & I’d definitely go again especially considering that it’s close to home & away from the strip.

Excellent dinner!! Our waiter, Daryl, was the best! Ask for his section! Prime rib was perfect and they made a very good French martini. We are new Vegas locals and this was our first time - it will definitely be a go-to place for dinner!

As great as usual. Wr come here every year for the races. We come to the Carve for perfect prime rib. Will be back next year too.

Very nice. Daughter was visiting from out of town and she loves Prime Rib. She loved it! I'm sure she will want to come back again next time.

Nice place to have dinner. Service is good employees are friendly and the food was very good. Shrimp scampi, particularly good.

Not much selection…just basic steakhouse stuff. Also found my dish (the October special) was overcooked (the beef) and too salty. My husband liked his pasta dish. The service was slow. Our server was busy as she was the only one working our side.

First return visit post end of Covid. Ordered one soda and one bourbon (Angel’s Envy on the rocks), then ordered the October special, shrimp and bbq over potato ( excellent). I had one of the Italian specials, vela parm, (very good). Here is my one issue, when I got the bill, I glanced over to see how much the usual ripoff was for a diet soda. I’m always curious about the various prices throughout the city. From $1.99 to as much as $6.00. It was ok, $3.98, BUT, my bourbon had a $2.00 charge for ICE!!!!! Are you out of your mind?! There is no charge for ICE with the Diet Coke! Since when is there a charge for ice in a drink?.. Because of this ludicrous charge, I will NOT dine in this resort again.
