The food and vibes was spectacular. I came here for the second time and it was still amazed me. The pork scotch was super tender and the sauce was lit!! Had panfried cod as second main course and the mussel emulsion sauce was top notch. New hidden gem in Canberra!!!

Great pre-fixe menu. Creative, tasty dishes. Surprised it wasn’t more busy on a Friday night - everyone in Canberra should give this place a try!

I cannot recommend Flui more highly. From start to finish, the dining experience was phenomenal. The flavour of the oyster is marvellously enhanced by the chill and zest of yuzu granita, presented with the pop of colour of native finger lime pearls. The balance of flavour and texture between the quail, the puffed grains and the pickled fennel works so well, and is mirrored in a later course with the juxtaposition of pepita seeds, roast pumpkin and whipped goat curd. The leek terrine was cooked with care and attention to detail, with the leek being soft while still maintaining a slight crunch, this was complimented by the crispness and flavour of the compressed apple. The spring bay mussels were tender and spicy, but not so much spice that you lost the enjoyment and sweetness of the mussels. The pork fillet with fermented jalapeño mayo was succulent, to the point of desiring to be able to fit more in, but knowing there was still a dessert course to come (that didn’t prevent us from managing to finish the serving and still have enough room to savour dessert). The dessert itself, torched pavlova, was very nicely balanced, not so sweet that I couldn’t enjoy it (I usually am not much of a fan of pavlova, but I ate every mouthful with an appreciation for the subtle balance of fruit and mascarpone), and the trio of sorbet for those who may desire a vegan of day free option were beyond belief. Set in a beautiful space, Flui is perfect for any occasion and has already established itself as one of the best restaurants in Canberra.
