The name "Former Saint" pays homage to the rich history of our location. In 1864, three pioneering Sisters of Loretto journeyed from Santa Fe to Denver to establish St. Mary’s Academy, which operated until 1910. Inspired by this pioneering spirit, our menu celebrates Colorado's adventurous spirit with thoughtfully crafted dishes and a commitment to sustainability. We partner with local ranchers, brewers, and distillers to offer hand-selected, sustainable meats, produce, craft beers, spirits, and wines. Enjoy Life in the Spirit.

Very nice dinner near the DCPA. Perfect for a pre-show dinner. The fried eggplant was some of the best we have ever had.

When I walked in the two hostesses did not greet me or offer me a seat. They seemed to be gossiping and looked at me standing in front of them and completely ignored me.

We had an outstanding night with a phenomenal dinner and great service. It was the perfect way to spend Valentine’s Day together. We will definitely be coming back for more special events.

Really fantastic service, friendly and efficient. Great atmosphere and wasn’t too crowded when I was there. Had a lovely salad that was good but nothing extraordinary. Convenient when starts the Hyatt

Our server Dakota was wonderful! We had a very pleasant, quiet supper in the restaurant - a perfect start to the evening!

This was my third visit, and it was not as good as my last two visits. Our waiter was nice but did not attend to us as much as he has previously. It would have been nice to get a refill on my soda. The food was good, but it took quite awhile to arrive, even though we explained we had theater tickets for 7:30 pm. I do like this place, but I was a bit disappointed this time.

Our server, Dakota, was excellent although it being New Years Eve had many tables to attend to which limited his ability to at times provide timely attention to all customers. Dakota was very personable & very helpful with his discriptions of menu items Food was very good with the menu providing vegen & vegetarian alternatives. The venue is modern, upbeat & spacious. A bit noise for casual conversation. We'd definitely return.

Not really worth the high price. Food was only so so, our charcuterie board was insanely overpriced and took 40 minutes to come out.
