A chef from central Mexico, found his passion for cooking through his family’s traditions. He later trained in gastronomy in San Luis Potosí and sharpened his skills in desserts at Espai Sucre in Barcelona. Coko’s career took off at Pujol in Mexico City, He later moved to London to lead "The Mexican Room" at Annabel’s Private Members Club, creating a menu that brought traditional Mexican flavours to life with a modern twist. Currently Culinary Advisor at Tayēr + Elementary, ranked #4 on The World’s 50 Best Bars list, Coko has played a key role in shaping its award-winning bar food menu, which was named "Bar Food Menu of the Year" in UK. Coko’s journey has been all about celebrating the flavors of Mexico while pushing boundaries

Born and raised in north London, Jemma has spent over 8 years working at some of the city’s most loved restaurant. M@With a passion for fresh pasta and a love for creating comforting food, Jemma draws inspiration from her background in art & design, and her fascination with history & culture. It’s going to be cold outside so expect warm comforting dishes such as a cime de rapa & bean, Ribollita.
