J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

Please reach out to our reservationist for private dining.
We offer Valet at $12 daily

    Bars typically aren’t the most intimate place to sit — but at Jcarvers, it is — was greeted with a custom name plate and the chairs are throne line and spaced far enough from others to feel like you’re in your own little bubble. 10/10 highly recommend. (The sole with crab & lemmon butter is next level btw)

    They fulfilled my requests and service was quick and attentive without being too intrusive. Food was amazing. Particularly the 55 oz tomahawk ribeye, blue crab fried rice, and short rib ravioli. Would highly recommend for a special date.

    After eating at Red Ash a few months ago, we were excited to try this place. We were celebrating my wife’s birth and it was a total letdown. The only bright spot were the appetizers. The main course was mediocre at best, and for the price, that is unacceptable. Our steak was way over priced for the quality of cut. Not tender whatsoever. The side gnocchi and wild mushrooms were terrible. My wife did not feel well after eating them. We left shortly after. Don’t think we will ever be back.

    Best steakhouse in Austin. Great cocktails and a huge selection of rare whiskies. Awesome service.

    Expectations were high, because we’ve heard so much about it. However, expectations were exceeded. Everything was great. Great ambience lively energy. Amazing food great service. Not cheap but you get what you pay for Kelli was our waitress and she was awesome and there was a team backing her. I didn’t catch their names, but they were great as well

    Loved the vibe. Tables spaced nicely and atmosphere was energetic and fun. It was my birthday celebration, and from the hostess to the rest of the staff, they made me feel special. Nice touches. Food was very good, steak cooked perfectly, and the staff friendly and knowledgeable. Drinks were good. Only negative -the bread we received with the bone marrow appetizer was completely black & burned. Surprised that it left the kitchen that way at such an upscale restaurant. It shouldn’t have been served. Everything else was great, and we would definitely dine here again. Thank you.
