Aureole was the flagship showcase for Chef Charlie Palmer’s bold, Progressive American cuisine—defined by its vibrant flavors, classical technique, and modern sensibility. Originally opened in a historic townhouse on East 61st Street, Aureole helped usher in a new era of American fine dining, earning critical acclaim and a throng of Michelin stars along the way.For more than 30 years, Aureole stood at the forefront of American culinary innovation. Signature creations—like Palmer’s now-legendary Scallop “Sandwich”—became hallmarks of a dining experience that balanced precision with playfulness. Beyond its celebrated menu, Aureole served as an incubator for talent, launching the careers of countless chefs and hospitality professionals. We will be offering a four course or six course tasting menu in the Bar, highlighting some of Chef Palmer's most iconic dishes. A portion of the proceeds will be donated to CityMeals on Wheels.
