Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Our new home, located at Alvaro Obregon 65 bis - a much wider space where gleams of natural light shine upon the surface-, is carefully assembled by Gabriela's meticulous look, and a kitchen built within Eduardo García's early memories, while living as an inmigrant in a barn in Ohio. Despite this big change, our principles initially founded remain the same: to offer food that distinguishes the best of local products.

The space is pretty but too sterile and the chairs were uncomfortable, there’s no ambiance. The table clothes are too long and kept getting tangled in my lap. The waitstaff was so attentive in swapping out plates unnecessarily and crumbing the table that we couldn’t carry on a conversation. The duck was delicious but was served atop a clump of cilantro leaves that was a disgusting combination. The filet was amazing. The ceviche was not good. The ratatouille had a weird, dark flavor and was pasty like too much flour had been added.

Great experience with fresh and interesting dishes. The restaurant accommodated our late request to reserve one of their signature cheeseburgers since they run out during the night. We had a late reservation and it felt like multiple waiters were taking care of us and while service was very good, it did feel a bit spotty at times. Highly recommend Maximo!

Everything was good from start to finish. We ate 3 entradas, shared an entree, drank 2 cocktails each, had espresso after with ice cream and spent about $220 USD. We were stuffed and happy afterward. I would go everyday if I could.

Superb dishes - especially if you stick to those with genuine Mexican character rahter than those geared for or tomed down tourists with less spice-tolerant palates. Sophisticated preparation and presentation without being “fussy”. Very friendly and attentive staff, even when very busy. Pretty space. Absolutely recommend.
