James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

We went Christmas Day which was maybe a mistake. My husband’s fish was over cooked and my pork was dry. The sides were good. They were out of Gray Goose and both of the wines we chose. We settled for a less expensive wine. I really had high hopes for this restaurant. The service was good. Maybe an off night for the kitchen.

Ambiance and service was good. Pork was very dry and lamb was slightly overcooked after a very long wait.

To have such a wonderful Christmas Eve dinner prepared for hubs and be—well..I can’t imagine I’ll ever forget it. Caribbean Roti to start — beautiful salads, capped off with Roasted Pork & Potato Soufflé— in a word: Yum! Merry Christmas to all at Perle Mesta…for sharing your culinary magic during the holidays……and living up to your famed namesake: surely you are a host with the most.

Our experience was great! From Cocktails, appetizers, salads, to main courses, everything was fantastic. I would definitely recommend Perle Mesta!

Perle Mesta was a wonderful dining experience. It was lovely when GM, Evan, came over to inquire about our evening. The food was delicious and our server, Laurel, was delightful. She was knowledgeable and very helpful with our choices. We will definitely request to be at her table when we return, which we will.

Beautiful restaurant. Very good food in small portions. Our third time. This time it was slow and the waiter was unapologetic. Sat at 7:30 received entrees at 9:15. Seems like they are having staffing issues. Overall a good experience but they need to add staff or figure out their slow service.

They were out of main ingredients (who doesn’t have bacon on hand for breakfast?!) The Shakshuka was served without the ingredients listed on the menu and had a very rubbery egg on top. It was like an overly microwaved egg on top of a very bad omelette. The plating was visually pleasing at least. I did not finish it. They comped my meal. Great coffee. Waitstaff was super! I do not plan to return. Chef Black clearly was not there to oversee his creations.

The food was outstanding! It did take a good couple minutes to receive our food though, but we were checked on frequently with amazing service! The food was well worth the wait! Desert was amazing. Will definitely be coming again. I recommend!
