                                                        A Seattle Favorite – Republic Never Disappoints For my colleagues and me, a trip to Seattle isn’t complete without a meal at Republic. It’s become a tradition—no matter how packed our schedules are, we always find time to come back. The food, the atmosphere, and the hospitality keep us returning again and again. For me, the highlight is always the pork chop—perfectly cooked, full of flavor, and paired with some of the best grits and collard greens I’ve ever had. It’s the kind of meal you think about long after you’ve left, counting down the days until you can have it again. Republic isn’t just a restaurant; it’s a staple of our Seattle visits. If you’re looking for a spot that consistently delivers incredible food and a warm, welcoming experience, this is it. Already looking forward to my next visit!

                                                        In our party the fish steak and pasta was ordered. The pasta was less than average and Luke warm. I would not order again. The rest of the food was well received.

                                                        We found re:public online looking for a restaurant not far from our hotel. We found parking be an issue but we were able to find a place to park right away. The food was excellent! We started with the Manila clams with a saffron butter broth that was delicious. My wife had the mushroom pasta with a mushroom cream sauce and I had the pork chop with grits and chard. Both were outstanding but my wife thought the sauce was a little sweet. My pork chop was everything I expected thick and juicy, and both dishes came out hot! I’m embarrassed but I don’t remember our server’s name and she told us. She was great, very attentive and very accommodating, she made a fresh pot of coffee for us. Overall it was a great experience and I will go back the next time we’re in the city.

                                                        Our food was very meh. Not a lot of flavour and the server did not answer our questions accurately. The soup of the day was described as leak and artichoke but no mention of spice and it was definitely spicy. The server left while we were paying and there was a problem, when we approached three other staff who were standing around the bar to assist us, we were treated so rudely and told to go back to our table to complete the transaction.
