Rojo Mexican Grill serves new culinary creations and many traditional dishes, such as quesadillas, tacos and enchiladas, but with bold new flavors or in unique presentations. Ingredients, such as the tortillas, guacamole, and salsas, are made fresh from scratch each day. And Rojo uses special proprietary blends of Mexican spices to create the unique recipes.
The stylish restaurant seats more than 280 guests and was designed to evoke traditional Mexican décor, but with a modern influence. Warm woods and soft red upholstery are offset by accents of leather, stone and steel. The dining room offers traditional table service and a generous view of the kitchen where diners can watch food prepared throughout the process. Three centrally located tables are dedicated to preparing hand-rolled tortillas, fresh guacamole and salsa in full view each day.

They were busy and understaffed Our poor server was overwhelmed A simple order was messed up Each persons meal came out 20 mins apart A meal that should have taken an hour turned into a 2 hour painful experience 85 bucks for a disappointing evening.

The margaritas were very watery tasting which is unusual at Rojo. The server was good esp since he was given a lot of tables. Short staffing.

First visit and the chips and salsa were great. I really enjoyed the sweet rice, sweet cabbage and the ribs were cooked perfectly with the just the right amount of heat. Will return!

We love Rojo. Tonight, however, service was slow, even though it was quiet for a Saturday evening. Wait staff were making errors on our drink and food orders. Unlimited chips and salsa can't be beat. You can't go wrong with the chicken tacos and enchiladas. Round things out with a margarita or a Negra Modelo.

The queso was really good! I also enjoyed the side of sweet corn with the entree, I wasn’t impressed with the tortilla chicken. It was tough and stringy. I didn’t like it so I ordered another meal instead- the shrimp tacos- which were decent. I’ve heard great things so I must have just ordered the wrong entrees. Husband said his ribs were good.

Are at Rojo tonight. Was quite busy and thus very loud. Server was busy, but got us drinks and took our order quickly. Great food. The enchiladas were served in a mini skillet—they were excellent. We all enjoy the fresh chips and salsa as well.
