With slow-roasted local meats. Rich savory sauces. Handmade pasta. Fresh-from-the-farm vegetables. Volario’s serves bold, earthy fare inspired by the pasture-rich terrain and fragrant kitchens across the Italian Alps – right here in the Rocky Mountains.

With a menu that changes with the harvest of the season and the catches from the streams, Volario’s surprises the palate with both local produce and faraway flair. As you savor the rustic and robust flavors from the mountainous regions of northern Italy, we invite you to sit back with a nice Chianti and reflect on your day in the majestic mountains here.

Our dishes are hearty and adventurous, much like Volario himself. The legend in the Grand Valley is as old as the pines that shade the creek. Volario wasn’t from these parts. Like many of us, he visited and couldn’t imagine leaving.

                  They were out of steak, bread, rum and half the wines on the menu. The waiter smelled disgusting. Smelled like a campfire and pot. I will never go back.

                  Service was fantastic and the ambiance is nice, not too noisy. Pizza was excellent and the dough is made in house. Pastas are homemade which is a plus. Papparadelle was good but wasn’t fantastic and needed more mushrooms. Bolognese was good but the noodles were too thick and the meat sauce needed more meat. Desserts were really good including the Tiramisu which is homemade.

                  Miso Fritos over cooked. Servers overwhelmed with little to no help. Took a long time to get served anything.

                  Great menu and food but took over a half an hour to be waited on (although it was holiday week). Wagyu meatballs are excellent as is the pasta arrabiata.

                  Volarios is 10/10 the food was beyond fantastic, every single dish we ordered was incredible! My son loves lasagna and he ate every bite of his. The desserts were delicious and the espresso martini was heaven! Everything is fresh and made with quality ingredients there are no short cuts! We will be back and telling everyone about Volarios! Wonderfull service and beautiful atmosphere too!

                  We visited here for my boyfriend’s birthday, hoping for a great dining experience with good food and wine. While the food and wine were indeed enjoyable, the service left much to be desired. The restaurant was severely understaffed, which led to incredibly slow service. Despite the servers being kind and doing their best, we didn’t receive our food until after the restaurant had closed. This was disappointing, especially given the occasion. Overall, the understaffing and delays overshadowed the quality of the food and wine. Unfortunately, we won’t be returning.
