Chef de Cuisine Cassandra Boyce has crafted a selection of dishes with a fresh twist on classic favorites, including foie gras beignets, B.C. spot prawn and ahi tuna mosaic, beef carpaccio with fresh uni, lobster torchon bisque, and a choice of beef tenderloin or preserved lemon snapper.
